CRISPY SKIN SALMON

with Herb Butter

Serves 4

There’s one thing that makes this dish extra special: the crispy skin. So make sure that once you place the fillets skin side down in the pan, you don’t touch them for 5 minutes. You’ll be tempted, we know, but resist! However, you can take a peek to make sure they’re golden on the edges before turning and putting the salmon in the oven.

4 tablespoons unsalted butter, softened

1 clove garlic, minced

1 tablespoon minced fresh tarragon

1 tablespoon minced fresh parsley

1 tablespoon minced fresh thyme

Grated zest of 1 lemon

2 tablespoons canola oil

4 skin-on center-cut salmon fillets (each about 6 ounces)

Kosher salt
